Hi Ukey,

I was gonna write you this letter sooner but I was caught in my work. I wanted to call to say thank you but I felt a letter would be more proper. Anywayz, thank you for your advice and help before the trip.

I have been living in Shanghai for about half a year, but I never had a chance to visit anywhere in China because of my work. I had to attend loads and loads of meetings and write reports. Last month was really a nice chance for me to go outside the city and enjoy something different. It was a pity that i couldn't stay for spring festival in Beijing. The festival in Shanghai was always fun but i think Beijing's spring festival might be better because it's the capital. From what I saw in the trip, everything seemed to be more authentic. Shanghai is more modernized with high buildings and large squares, however, Beijing is like the center of the Chinese culture, so everything was more original.

There was not really a place that I liked best. I liked them all. It was a bit cold on the Great Wall, but seeing all the beautiful mountains just made it all worth while. I was a little disappointed because I didn't get to see a snowy mountain. I have always seen gorgeous Great Wall pictures online. I wanted to see them myself but it didn't snow in Beijing.

I was very impressed with the Peking Duck served at Quanjude. I had Peking Duck before but I had never seen anything like that. They cut the skin, just the skin off and I ate it with sugar. The skin just melted in my mouth. It was unbelievable. How did they make it like that? I saw they do it right in front of me. It was very interesting to watch how the duck was cut. It's just they gave me so little side dishes, that wasn't so considerate.

We watched a Kung Fu show too. It was fantastic. Do you know a show in the UK called Britain's Got Talent? I think anyone on the stage would win it. It was just fantastic!

I wish I had more time to stay there longer but I had to go back to Shanghai. Now I'm thinking about visiting Xi'an sometime, only during the weekends though. I will contact you when I decided when to go.

I'm glad that you had a good time, but at the same time, sorry that you didn't get to experience Spring Festival in Beijing.

First I'd like to answer your question about Beijing Roast Duck. Beijing duck is an art. Specialized chefs have developed the idea that the skin of the duck should be so soft and crispy that it melts in the mouth. First, the duck will not lose water when being roasted. Second, the water will keep the chest of the duck swollen so that the skin will not shrink and will not become softened by the roasting, with the result that the duck skin will be thin and crisp and become the most delicious part of the roast duck.
